02 · The American smoke map
One country. Several religions.
Texas is beef. Carolina is vinegar pork. Memphis is dusted ribs. Kansas City is mixed meats and a sticky finish. Alabama is white sauce on hickory chicken. Louisiana is not a fifth pillar — it is still American smoke. Kentucky mutton and Santa Maria tri-tip keep the edges honest.

Beef-forward
Texas
Sliced brisket, a beef rib, a link, white bread, onion, pickle.
Wrapping pale meat because the stall scared you. Bark first. Then paper.

Pork, hickory, dust
Tennessee / Memphis
A rack dusted so the bark looks rust-red, pickles, white bread, maybe a shoulder sandwich.
Candy-glazing ribs for two hours. Memphis wet is a late sheen, not a syrup bath.

Vinegar, chop, whole hog
The Carolinas
Chopped pork, a puddle of dip, slaw, a cheap bun or a tray.
Treating all Carolina sauce as one red bottle. East, west, and gold are three religions.

Mixed meats, sticky finish
Kansas City
Burnt-end cubes, a sticky spare, pickles, white bread, a cup of lacquer.
Sauce at the start. Sugar burns. Bark first, lacquer last.

Not a fifth pillar. Still American smoke.
Louisiana
Sliced hot links, coarse grind showing, mustard, pickled okra, a cup of mop.
Copying Central Texas salt-pepper on a Cajun pit and calling it Louisiana.

Hickory chicken, white sauce
Alabama
Smoked half-chicken, white sauce in a cup and on the skin, white bread, pickle.
Brushing white sauce on at the start. Mayo and a hot grate will break and scorch. Sauce after, or in the last minutes off direct heat.

Brief
Kentucky mutton
Chopped or sliced mutton, black dip, white bread.
Substituting lamb and expecting the same collagen story. Mutton needs time.

West Coast live-fire cousin
Santa Maria tri-tip
Sliced tri-tip, medium-rare to medium, salsa, pinquitos, salad, bread.
Smoking a tri-tip like a brisket until 203°F. You will dry a roast that wanted a grill.
